To delight your tastebuds, he would offer you a Tour de France of specialities such as: Andouillette tripe sausage from Troyes or from Guémené, parsley ham from Burgundy, smoked Morteau sausage, dried sausage from Lyon fresh from the pork-butcher, frankfurters from Alsace. For fresh cold cuts, he would deliver you sausages, black pudding, hot ham joints, pig's snout salad and brawn. Making the most of his Spanish ancestry, François Tomé shares his taste for Iberian cold meats and suggests sampling some delicious specialities such as: genuine Bellota chorizo, Majorcan sobrasada, Serrano ham, Lomo cured filet mignon. Rostan's produce is seasonal: so you will find strawberries in spring; as well as tomatoes and melons in summer; and also cabbage and leeks in winter.
